mothers day treats.

I have been looking for a good reason to make these yummy desserts- and Mother's day was perfect. I made these yesterday for [most of] the wonderful mothers in our families.  I found this recipe but it seemed like much more work than I wanted to do. SO I thought about a 'no-bake' cheesecake, in a little jar!

I used 4 oz wide mouth jars- I found them 12pack for $8.


To make the "crust":
1 3/4c. (1 package) Graham crackers smashed up
1/3c.butter- melted


To make the cheesecake layer:
3 pkg. (24oz) Phildelphia cream cheese [blocks]
3/4c. sweetened condensed milk
2/3c. sugar
2Tbsp. lemon juice
2tsp. vanilla extract
[I had a lot of this left over]

Mix cream cheese & unsweetened condensed milk until smooth.
Then add sugar, vanilla, lemon juice and mix well.


I didn't really measure out how much crust or cheesecake I put in each jar.
 I just eyeballed it to make them all look even..



I used almost all of both of these 21oz cans of pie filling.


The yummy & cute results:



My mothers day was perfect today.
I got a great card and beautiful roses from my daughters.




and my husband made breakfast for us all, which was delicious.

I had a very relaxing rest of the day.
I camped out in the quiet basement- by myself..
I caught up on some Real Housewives episodes.
then took a 2 1/2 hour nap!!

Thank you to my wonderful husband for making that possible.

{we call this their "special seat"-on top of the fridge}
